The guest speaker from Growzer presented the role of Artificial Intelligence in hospitality management, focusing on how AI supports operational decision-making in areas such as inventory control, staff planning, menu engineering, and waste reduction.

The presentation highlighted how AI systems analyse large amounts of operational data to predict occupancy rates, optimise ordering quantities, and reduce food waste. Rather than relying on gut feeling, Growzer’s AI uses predictive models and real-time data to improve accuracy, efficiency, and cost control in hospitality businesses.

This element was chosen because it directly supports the concept of Green Plate Solutions and its software Waste Wise. The use of AI strengthens the concept by showing how data-driven insights can reduce food waste while allowing staff to focus on service quality and guest experience. The presentation also reinforced the importance of balancing technology with the human side of hospitality, which aligns with the ethical vision of the project.
